Carrot Walnut & Orange Loaf

1x orange
150g (51/2ozs)Sunflower margarine
150g (51/2ozs)Caster sugar
175g(6ozs)carrots peeled and grated.
50g (2oz)walnuts chopped
2 eggs
200g(7ozs)self raising flour
Method
1 Preheat oven to180c 350f Gas Mark 4
2 Lightly grease and line a 900g (2lb)loaf tin
3 Finely grate the orange rind,squeeze the juice.
4 Place the margarine sugar flour carrots orange rind and eggs in a large bowl mix until blended.
Add the nuts and approximately 15ml(tbsp) of the orange juice to give a dropping consistency
5 Spoon into the tin
6 Bake in the preheated oven for 1 hour or until a skewer inserted in the centre of the cake comes out clean.
Leave to cool in the tin for a few minutes.Turn out and cool on a wire rack.
7 For a picnic wrap in foil and remember to take a knife
